I found this interview with editor extraordinaire Thelma Schoonmaker on Flotsam's website. It's kinda old (she'd just finished editing Cape Fear), but it's an interesting read. She's worked on nearly every Scorsese film, deservedly winning Oscars for Raging Bull and The Aviator. She's one of the greats!
